In Snapshotting Love, Meghan whips up some pimento cheese, slathers it on some sourdough bread, and grills it to perfection. She feeds a bite to Brandt in a scene that brings the heat, which leads to {Redacted: Spoiler}.

Lizzie B’s Pimento Cheese Sandwich
I thought I’d share my version of a Sourdough Pimento Cheese sandwich – in case you want to recreate the moment! FYI: My pimento cheese recipe is based on this one from Cookie and Kate.
Ingredients
- 2 cups freshly grated extra-sharp Cheddar cheese
- 8 ounces cream cheese, softened at room temperature*
- 4 ounces chopped pimento peppers
- 2 tablespoons mayonnaise
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon ground smoked paprika
- Sourdough bread (or some other crusty bread)
- Olive oil
How to Make
- Preheat a grill pan, cast iron skillet, or panini press.
- In a large mixing bowl, combine the cheddar, cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, and paprika.
- Beat the mixture together until the mixture is thoroughly combined.
- Taste, and add a pinch or two of the spices if more is needed. Blend again.
- Brush or spray some olive oil on two slices of sourdough bread.
- Flip one of the slices over and slather a glob of pimento cheese all over the slice.
- Put them together and grill the sandwich until lightly toasted on the outside and slightly melted.
- Serve and enjoy your sourdough pimento cheese sandwich!
Note: You can eat just the pimento cheese with crackers, on a spoon, or in an omelet. Just put it in the fridge if you have any left over. It’ll harden up a bit, but it’s nothing a butter knife can’t handle.
